When you want to cook a roast, but you don't have much time, consider cooking a bone-in roast. Your roast will be done a lot faster because its bone transfer heat to your roaster. When the meat has cooled enough to let the juices settle all you have to do is go around the bone when cutting and serve.

The use of brine is an effective cooking technique. Let poultry soak in brine for one hour before you prepare it for more flavor.

Be sure to refresh your spices every few months. The flavor of spices diminishes if they sit around for too long. When you know you're not going to be using a spice for a long time, give it away to someone in your family or to a friend before it loses its flavor.

For healthier, lower-calorie mashed potatoes, add some cooked cauliflower to your tubers. Always remove the extra fat from your stews and soups. To eliminate any extra fat in your stew or soup, allow the dish to cool completely so that the fat will rise to the top. Balance an ice cube in a teaspoon and slowly skim it over the surface. The fat should stick to the ice cube. Take a paper towel and blot away the fat that collects.

Use cooking oil when you are measuring out things that are sticky. Just coat your measuring spoon with an oil that has a very mild flavor (Canola is a good option). When you use that spoon to pick up the sticky substance, it will slip off the spoon, and into your mixing bowl, with ease. This works well for peanut butter and honey, as well as other sticky foods.

When you truss your bird, you tie its legs and wings together. It pulls the legs and wings close against the bird, which helps the turkey to cook more evenly. If the legs and wings aren't tied down, they tend to easily burn while the body of the bird continues to cook.

Do you want to cook with fresh basil? Try placing clumps of fresh basil into a clear, glass container. Add water until the stems are covered. You could let it sit on your counter and it will stay fresh for weeks. You can even grow new basil plants if you feel like changing the water every day or so. The stems will sprout roots; that's the wonder of plant life. Trim or cut the basil regularly to encourage growth and you will be able to enjoy fresh basil!
